certification furthers the hotel's strong commitment to sustainability
and demonstrates ongoing efforts to contribute to a healthier
environment.
The Alto Hotel on Bourke
has enhanced its reputation as one of Melbourne's leading hotels in
guest satisfaction as well as innovation by becoming the Australia's
first carbon neutral hotel. Some food & beverage style hotels,
cabins and cottages have offset carbon from some of their services or
provide an option for guests to pay for offsets, however Alto is the
first city hotel to provide all of its services and facilities as
carbon neutral within its pricing.

"We have already been recognised as a leader in sustainable tourism yet wanted to ensure we continue to innovate and show that it is possible to have guilt free travel without compromising on quality or service," said Gary Stickland, General Manager of Alto Hotel on Bourke."Instead of simply paying someone to make our environmental footprint go away we have ensured that we have minimised our output as much as practical first, then made the decision to offset the remaining carbon that we have not been able to remove from our operations" he said. "All of our environmental initiatives have been made by considering our guests first. This means that some guests are not even aware that they have stayed in a sustainable hotel as we have designed our programs to effectively be behind the scenes and not require any effort from our guests, unless they want to be more involved." The hotel provides the key ingredient for the potential to have a low carbon holiday or business trip to Melbourne.
To achieve NoCO2 certification, Alto Hotel undertook a comprehensive carbon emissions audit that captured and quantified all of the hotel's greenhouse gas emissions. The audit included emissions from fuel and energy consumption onsite; staff travel, water and waste usage and flights taken by Alto Hotel staff. In addition, the embodied emissions in the hotel's assets and expenses items were also audited to capture indirect emissions from supply chain purchases and any products bought, used and sold through the hotel.

Art of Espresso
Adrian & Gabrielle Capra of the Art of Espresso Coffee Company
began their journey into coffee through the hospitality industry and a
love of the cafe lifestyle.
Eleven years ago, they opted for a
"tree change" and gave up the city lifestyle to open their dream cafe
in the country. It was either open a cafe or don't make the move as
Adrian could not go without his daily espressos. After many visits to
the country they wanted to introduce the city cafe scene to the country
and thus their quest to change the way coffee is perceived in the
country began.
They quickly gained a reputation for their
coffee, food and service but it was the coffee where they held their
passion. After serving coffee at local country events they decided to
design and build a mobile coffee cart.
Art of Espresso are now proudly NoCO2 certified.

As well as a commitment to high quality food and coffee, Fresh Espresso and Food Bar has committed to reducing and offsetting all the greenhouse emissions that occur due to the existence of the café. Not only does this include the emissions from gas and electricity used onsite but also the emissions from the production and transport of the food and coffee they sell as well as the embodied emissions in all other company assets and expenses. This is a significant investment in a more sustainable future as the emissions from food production and transport can amount to a quite a large climate change impact.
Fresh Espresso and Food Bar commissioned the Carbon Reduction Institute to undertake an emissions audit of their business and through the NoCO2 scheme run by the Carbon Reduction Institute have committed to running a carbon neutral café. This means that every time you purchase a coffee or meal from Fresh Café they have offset all the emissions produced from the growing of the vegetables or meat, all processing and transport and the energy they use onsite to prepare the food for you. Fresh Espresso and Food Bar purchase energy efficiency carbon credits to offset all unavoidable carbon emissions. By doing so, and by undergoing regular emissions monitoring and re-auditing, Fresh Espresso and Food Bar can now claim to be truly carbon neutral.

ZILZIE WINES
The fragile relationship between the environment and wine production means climate change will dramatically affect the wine industry. Temperatures in most Australian wine regions are projected to increase up to 1.7°C by 2030 resulting in irreversible changes which wine businesses will need to adapt to. At Zilzie, we have always had a strong environmental ethic, so deciding to eliminate our carbon footprint and promote a wine range as carbon neutral was one more step to show we care about our connection to the land. We also were excited to see the potential benefits from marketing and staff education.
The first step in engaging the Carbon Reduction Institute to make our wine carbon neutral was to undergo a comprehensive carbon audit that quantified the greenhouse gas emissions from the life cycle of the product from cradle to consumer. See our disclosure statement for more details about what this included. An audit report produced by CRI showed the sources and breakdown of emissions. We then purchased carbon credits to offset these emissions and certify the Bulloak range under the NoCO2 certification program.
